Recipe B:

1/2 cup grape seed oil

1 cup almond milk

1 teaspoon dry mustard

1 teaspoon apple cider vinegar

1/8 teaspoon coarse sea salt

1/8 teaspoon coarse ground black pepper

1 teaspoon Xanthan Gum

I blended it with the magic bullet, 20 seconds.

Mayo Recipe C will have more salt and pepper.  This one will do until more perfected and will replace the commercial product, in my home.

HM Naan

HM Naan

Put ingredients, in this order, into your bread machine pan:

  • 1/2 cup whole milk
  • 2 Tablespoons olive oil
  • 1/4 cup Fage Total (whole fat)
  • 2 eggs, slightly scrambled
  • 1 teaspoon coarse sea salt
  • 4 cups unbleached all-purpose flour
  • 1 teaspoon garam masala
  • 4 teaspoons vital wheat gluten
  • 4 1/2 teaspoons bread machine yeast

Use Dough Setting for 2 pounds (1:30)

After 1minute, you will be able to see if you need to add water to your bread.  You do not want flour not mixing into the dough and you do not want it so wet that isn’t forming a ball of dough.  Add flour or water, by the Tablespoon.  For this recipe I added 6 Tablespoons of water.

Remove dough from machine, when prompted, and roll in flour, over all wet areas.. roll out into a log and cut in half.  Cut each half in half – twice.  You will have 8 pieces.

Turn each cut side onto the flour, on the board, and cover to rest 5-10 minutes.

Shape each cut piece into a ball and flatten with fingertips.  Use rolling pin to make a thin circle.

Cover each circle and let rest while oven comes up to 450 degrees.  I cook them on an upside down cookie sheet that pre-heats, in the oven.  Toss two onto the hot, upside down sheet.

Bake about 3 minutes.  Remove from oven and cover with a towel.

When all eight are finished baking, turn oven to broil.  Place two breads back onto the cookie sheet, for less than a minute, to brown.  Watch, carefully, to not burn them.  This extra toasting really enhances the flavor, although you can skip it.

Do not wrap, in plastic, until completely cooled, to keep dry.

HM Pitas

HM Pita Bread

Put ingredients, in this order, into your bread machine pan:

1 1/2 cups water

2 Tablespoons Olive Oil

HM Ground Beef Gyros Burgers

1 pound ground sirloin

1/2 Tablespoon dried Italian Seasoning

1 teaspoon granulated garlic powder (not fine powder)

1 teaspoon onion powder

1 teaspoon coarse sea salt

1 teaspoon coarse ground black pepper

Mix spices into meat and refrigerate overnight.  Form into four patties and fry on ungreased surface, to brown on both sides.  Try to only turn them once.

Cut into strips.

Serve over salad, or on HM Naan or HM Pita Bread, with HM Tzatziki Sauce, tomatoes, and shredded lettuce.

Our Favorite Tzatziki Sauce

HM Hummus, Tzatziki and Naan

One 17.6 ounce (500 g) container Fage Total (Fa-yeh) Greek Style Yogurt (Full Fat) minus 1/3 cup (1/3 cup for HM Naan Bread.)

1/2 teaspoon granulated garlic powder

1/4 teaspoon coarse sea salt

1/4 teaspoon coarse ground black pepper

1/2 teaspoon dried basil

Stir together.  Serve over Hummus or on Ground Beef Gyros

Spaghetti Sauce to Eat and Put Up

Spaghetti Sauce Pintz

Yields: 12 Pints plus dinner :)

Saute, in grape seed or olive oil:

  • 1 large onion, diced
  • 6 cloves garlic, minced

Add 2 pounds ground sirloin. Drain.

Add:

  • 4 cans (58-60 ounces total) diced tomatoes
  • 4 cans (58-60 ounces total) tomato sauce
  • 48 ounces tomato paste
  • 56 ounces water (7 cups)
  • 8 Bay Leaves
  • 4 Tablespoons Dried Basil
  • 1/4 cup Dried Italian Seasoning
  • 1/8 cup (8 Tablespoons) Granulated Garlic Powder
  • 4 teaspoons coarse sea salt
  • 4 teaspoons restaurant ground black pepper

Simmer for 2-3 hours, on low heat.

Serve over one pound angel hair pasta, cooked.

Put up left-overs into 12+ pints and freeze.

OatMeal Pancakes

oatmeal pancakes

Prep:

Soak 2 cups Old Fashioned Oats in 2 cups whole milk buttermilk overnight (or up to 3 days.)

Dry Indredients:

  • 1/2 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 2 Tablespoons organic cane sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon coarse sea salt

Mix together and cut in 2 Tablespoons room temperature butter.

Wet ingredients:

  • The oat/buttermilk mixture
  • 1/2 cup whole buttermilk
  • 2 eggs, slightly beaten
  • 1 Tablespoon Agave Nectar (you can use honey)

Mix wet ingredients together and fold into flour mixture.

Cook on hot griddle (electric stove, just above medium) to brown on both sides.

Can be flash frozen, stored in a plastic zipper bag, and reheated in the microwave.

HM Barbeque Sauce

BBQ Sammiches

Saute 2 onions and 2 cloves of minced garlic until onions are soft.

Add:

  • 12 ounces (1 1/2 cups) water
  • 3 Tablespoons Apple Cider Vinegar
  • 3 Tablespoons Worcestershire Sauce
  • 1 teaspoon hot pepper sauce
  • 1/8 cup organic brown sugar
  • 2 teaspoons coarse sea salt
  • 1/2 teaspoon restaurant ground black pepper
  • 1/2 Tablespoon chili powder
  • 1/4 teaspoon paprika
  • 1/2 teaspoon dry mustard

Mix in 2 cups HM Ketchup

Cook on low for about an hour.

To serve:

De-bone and cut-up a Rotisserie chicken.  Add to metal bowl (almost room temperature) and ladle sauce over, to heat.  Serve on HM Bunz.

or

Add Spicy Shredded Beef to a metal bowl and ladle sauce over, to heat.  Serve on HM Bunz.

HM Bunz

HM Bunz

1 1/4 cup whole organic milk

1/3 cup grape seed oil

1/4 cup organic cane sugar

1 tsp coarse sea salt

3 3/4 cup unbleached all-purpose flour

3 teaspoons vital gluten

2 1/4 teaspoons bread machine yeast

Place all into bread machine pan, in order listed (wet to dry).  Use dough setting for 1.5 pound loaf (time 1:27).

Prep:

  • flour sack towel, to cover rolls, as they rise
  • 1/4 cup flour, spread on cutting board surface
  • Line your baking pan with parchment paper
  • Serrated knife
  • Preheat oven to lowest setting.  When prompted ready, turn it off.

Remove dough when machine prompts.

Stretch the dough, into a log, while rolling, slightly,  into the flour, on the cutting board surface, covering all sides.  (approx12 inches long)

Cut, with serrated knife, into equal sections.

For hamburger buns, use 16 equal sections.  Roll with your hand, to shape into a round bun.

For hotdog buns, roll into hotdog shapes.

This batch, pictured, made 8 hot dog buns, 5 hamburger buns, and 20 small dipping rolls.

Set on parchment covered pan, almost touching.

Proof inside warmed oven for 45-60 minutes, to double their size.

Remove from oven.  Preheat oven to 400 degrees.  When your oven prompts that its heated, reduce temperature dial to 375 degrees, and put your buns inside to bake.

Check at 9 minutes.  Golden brown take 9-11 minutes, for larger buns. (If you are making small dipper rolls, check at 6-7 minutes. Remove when golden brown.)

HM Ketchup

HM Ketchup

24 ounces tomato paste

1 cup filtered water

1/2 cup cider vinegar

1 cup organic brown sugar

2 teaspoons coarse sea salt

1 teaspoon ground cumin

1 teaspoon dry mustard

1 teaspoon granulated garlic powder

1 teaspoon onion powder

Blend altogether and refrigerate.

Makes approximately 6 cups.
