Put ingredients, in this order, into your bread machine pan:
1 1/2 cups water
2 Tablespoons Olive Oil
1 Tablespoon Sugar
1 1/2 teaspoons
3 cups unbleached all-purpose flour
3 teaspoons vital gluten
2 1/4 teaspoon bread machine yeast
Use Dough Setting for 1.5 pounds (1:27)
After 1-2 minutes, you will be able to see if you need to add flour or water to your bread. You do not want flour not mixing into the dough and you do not want it so wet that isn’t forming a ball of dough. Add flour or water, by the Tablespoon. For this recipe I added almost 1/4 cup of flour.
Remove dough from machine, when prompted, and roll in flour, over all wet areas.. roll out into a log and cut in half. Cut each half in half – twice. You will have 8 pieces.
Turn each cut side onto the flour, on the board, and cover to rest 5-10 minutes.
Shape each cut piece into a ball and flatten with fingertips. Use rolling pin to make a thin circle.
Cover each circle and let rest while oven comes up to 450 degrees. I cook them on an upside down cookie sheet that pre-heats, in the oven. Toss two onto the hot, upside down sheet.
Bake 5 minutes. Remove from oven and cover with a towel before serving. Do not wrap, in plastic, until completely cooled, to keep dry.
