3 cups Hot Milk
1-1/2 cups Old Fashioned Oats
2 eggs, beaten
4 Tablespoons Oil
4 Tablespoons Molasses
2 cups all-purpose flour
3 teaspoons baking powder
1-1/2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon baking soda
1/2 teaspoon sea salt
6 egg whites
In a large bowl, combine milk and oats. Set aside for five minutes.
Stir in eggs, oil, and molasses.
Combine dry ingredients. Stir into oat mixture, just until moistened.
Beat egg whites until soft peaks form; fold into batter.
To cook: Pour 1/4 cup batter onto hot, greased skillet.
Cook until bubbles form. Turn and cook til lightly browned.
