6-8 medium sized Roma Tomatoes (can substitute some canned)
1/2 bunch of fresh cilantro, chopped fine
1 large red/purple or Vidalia/Sweet Onion
1 large Jalapeno pepper
Juice of one lime
Chop tomatoes and onions into bite sized pieces.
Finely chop jalapeno (remove seeds and stem) and cilantro.
Mix together with lime juice.
Serve Salsa over an 8 oz brick of cream cheese
Equal parts whipped cream cheese and sour cream
8 ounces of cream cheese, whipped with a couple splashes of milk
